1 NYBCo Soft Seeded Bagel Thin
1 red pepper, deseeded and sliced (see tip)
2 tsp olive oil
2 NYBCo soft seeded thins
Large handful spinach leaves
Preheat the oven to 200C/fan 180C/gas mark 6. Toss the pepper slices with the olive oil, place in a roasting tin and cook for 20-25 minute until soft and beginning to char. Cool slightly. Spread the Bagel Thin bases with the houmous, top with the peppers and spinach. Add the lid and enjoy! Alternatively store it in your bagel tin for later.
Make it quicker by using 50g ready roasted peppers, sliced, from a jar.
